Potato pancakes with smoked trout

Potato pancakes is a classical Polish dish. Fortunately, even during the most difficult times, potatoes, onion and oil have always been in the kitchen. In a few homes they are served with cream and jam, and there is a more satisfying version with meat or vegetable stew. In my home, we ate them simply with sugar.


My pancakes today were supposed to be dry. It was only a partial success because my son intimated that they come into the picture only with caster sugar. This time my daughter gave the sugar a miss. She demolished a whole bunch of pancakes with ... nothing.


For adults I propose something a little different: thick sour cream, smoked trout and dill. They were excellent. Prepare and try them. I recommend them!


Ingredients:
1kg of potatoes
half an onion
5 tablespoons of flour
2 tablespoons of natural yoghurt
2 eggs
salt and pepper
oil for frying
on the top: 18% sour cream, smoked trout, dill


Peel the potatoes and grate them. Put the potatoes in a sieve and drain them. Leave the liquid from the potatoes for a few minutes, then pour away the water and add some starch to the grated potatoes. Grate the onion. Add the onion, flour, eggs and yoghurt to the potatoes. Mix them in. Spice it up with salt and pepper. Using a spoon, put the mixture in a pan with heated oil and fry on both sides until it is slightly brown. Put the fried pancakes on a kitchen towel to drain the fat. Decorate with sour cream and pieces of the smoked trout and fresh dill before serving.
