One of the awful dishes served for afternoon tea in my nursery school was kissel. It had a flavour that was difficult to define and grated apples. I don't know if there was even one child in my playgroup who ate this dessert with pleasure. From then on I have avoided this kissel-and-apple combination like the plague. Recently I decided to change it. I prepared apple kissel. It was smooth and yummy, and I served it with natural yoghurt and fresh fruit. This dish looked nice and tasted excellent.


Ingredients:
3 big apples
3-4 tablespoons of lemon juice
2-3 tablespoons of maple syrup
a piece of cinnamon
1 teaspoon of potato flour
150g of natural yoghurt
fruit

Food bowl has long been one of my favourite ideas for a fast dinner. The inspiration for these dishes is for sure Instagram, and beautiful photos of colourful dishes served in bowls. Food bowls are not only breakfast decorated with flowers, fruit, nuts and seeds. They could also be dinner or lunch, because you can put almost everything into the bowl, making a heathy, balanced meal which is yummy, beautiful and easy, and you can safely pack it for lunch.


Today I would like to share with you the recipe for my food bowl: quinoa, roasted radishes, cherry tomatoes, feta cheese and pistachios. In my opinion: yummy! I also need a lot of chopped parsley, a spoon or fork and it's ready to eat. I added sesame seed oil to my food bowl. You should add it just before serving because you don't need to heat it more than 70C. I recommend it!


Ingredients (for 2 people)
100g of quinoa
8-10 radishes
100g of feta cheese
6-8 cherry tomatoes
3 tablespoons of parsley
2 fistfuls of pistachios
2-3 tablespoons of sesame seed oil
salt and pepper

When I was preparing some very quick, easy cookies, my son followed me around asking what I was making. Miraculously, I saved the baked sweet crisps, because they were so excellent they could have disappeared in a heartbeat. In fact I didn't need to do anything else. However, I also prepared very easy and refreshing lemon cream with mascarpone cheese. Some fruit, a bit of chocolate and the swift dessert is ready. My son called it "sweet burrito". We liked this name. For sure we will prepare these cookies once again. The season for the most beautiful fruit is coming.


Ingredients (18 cookies)
3 tortillas
100g of butter
150g of brown sugar
250g of mascarpone cheese
3 tablespoons of lemon juice
grated rind of half a lemon
2 tablespoons of caster sugar
any fruit
50g of chocolate

Greek salad is one of my favourite supper dishes. I like the combination of tomatoes, olives, feta cheese and roasted sunflower seeds. I never add cucumber to it. Not only because you don't need to add tomatoes and cucumbers to one dish, but also because I really don't like cucumbers. I also love green asparagus spears. Today I decided to mix both flavours, and I made a variation of Greek salad. It was surprising how yummy this meal was.


Ingredients (for 2 people)
2 fistfuls of corn salad
10-12 cherry tomatoes
8-10 black olives
half a red pepper
150g of feta cheese
half a bunch of green asparagus spears
4 tablespoons of sunflower seeds
3 tablespoons of olive oil
salt and pepper

This year our preparing preparations to for the Easter were have been obscured a little obscured by the my daughter's primary school exams after primary school. In the future Wwe will soon have a very nervous stressful time of recruitment intogetting her into a secondary school. We decided to forget about if it for the Easter and only just rest.


I wish you a very Happy Easter which will bring you and your family plenty of love, health and peace. I hope that each and every one of us will find in this spring season what they need most: family atmosphere, rest, some time for reflection with a cup of coffee and a piece of mazurek (Polish (traditional Polish Easter cake). Go for a spring walk, enjoy the sun and nature waking up to new life.
