According to my son, I had prepared a dessert for girls. The pink tapioca with red jelly and red currants was difficult to accept at first. Because, despite the colour, it was the same beloved tapioca, my son warmed to it and tried the dessert. Then it only got better. Eventually the pink girly dessert was accepted and eaten to the last teaspoon.


Tapioca and chia seeds afford many opportunities. They are excellent in the basic vanilla version. You can add also chocolate or some fruit (blended or in small pieces) – whenever you have a new and interesting yummy dish. Today I added raspberry mousse to my tapioca pudding. It was yummy!


Ingredients (for 4 people)

400ml of coconut milk
200ml of milk
60g of tapioca
3 teaspoons of sugar
1 teaspoon of vanilla essence
150g of raspberries
jelly
150g of red currants
2 teaspoons of caster sugar
2 tablespoons of orange juice

Dinner salads with pasta or groats command a good price. You can prepare them with everything you have in your kitchen, pack them, safely take them to work and easily reheat them. Every day you can enjoy a new dish. This kind of salad is an excellent alternative to a hot supper. Parents whose children train intensively (and after training instead of "Hello" ask "What can I eat?) should appreciate them.


Today I would like to share with you the recipe for a salad with penne and snap peas.
These inconspicuous pods don't take long to cook, and they are light, crunchy and look beautiful on your plate.


Ingredients (for 2 people)
100g of penne
1 clove of garlic
chili pepper
100g of snap peas
a piece of courgette
a couple of cherry tomatoes
a fistful of cashew nuts
2 tablespoons of chopped parsley
2 tablespoons of Parmesan
2 tablespoons of olive oil
salt and pepper

My daughter does martial arts. She has training a few times a week, and sometimes I think that it is better to dress her than feed her, even though all parents of teenagers know that it is almost impossible. She eats lunch at school, but on the days when she has training she needs to eat something substantial. I have to remember to prepare such a big dish earlier, because after a big meal she might prefer sleep to exercise.


Today I would like to share with you the recipe for a sandwich which could be either lunch or dinner if you don't have enough time to cook. It is big, fragrant, yummy and very tasty. My daughter's eyes were huge when she saw this dish.


Ingredients:

1 tablespoon of butter
half an avocado
2 lettuce leaves
a few pieces of red pepper
100g of smoked salmon
2 eggs
1 tablespoon of oil
cress or chopped chives

A few years ago in a Warsaw cake shop, we bought a yummy meringue torte. Unfortunately, they don't make them anymore. Apparently, they got squashed when they were being sliced and the dessert looked inelegant. Instead, you can now buy a small meringue dessert with cream and other ingredients. I like a messy meringue dessert. The crushed meringue, cream, fruit sauce and loads of fruit is a luxury on the plate which stimulates my taste buds.


Today I prepared this disordered dessert. Because meringue is so very sweet, the rest of the ingredients should be a little sour. Lemon cream, sour fruit and homemade fruit preserve complement it nicely.


Ingredients (for 3 people)

250g of mascarpone cheese
150ml of 30% sweet cream
1 teaspoon of caster sugar
4 tablespoons of lemon juice
1 teaspoon of lemon peel
preserve
raspberries, blueberries

Sunday dinners are a challenge for me. On the one hand I would like to prepare something unusual, but on the other hand I don't want to stay in the kitchen all day. Sunday before noon is an excellent time for a walk with the family or for resting with an interesting book and good coffee. I try to prepare dishes which, after a little attention, cook themselves.


Today I would like to share with you the recipe for a nice dish: turkey wraps with goat's cheese and Parma ham in mustard sauce with Cognac. I served them with Asparagus spears with a pistachio-crumble topping. I recommend it! It is excellent.


Ingredients
4 big Turkey chops
4 slices of Parma ham
100g of goat cheese
2 tablespoons of chopped parsley
red pepper
2 tablespoons of flour
2 tablespoons of oil
250ml of bouillon
half an onion
1 clove of garlic
2 twigs of rosemary
2 teaspoons of French mustard
50ml of Cognac
