Do you like rice with apples? I do. Sometimes I prepare this dish for winter supper for my children. I like it when the rice is slightly overcooked and very hot. I serve it with stewed apples and cold natural yoghurt. I thought that this dish would be similar to risotto. This time I prepared a sweet-coconut version of risotto with apples. An interesting addition was the crunchy coconut crumble topping. Unfortunately, I ate very little of the risotto, because my son ate most of it.


Ingredients:
risotto:
120g of arborio rice
400ml of coconut milk
250ml of water
a piece of cinnamon
2 tablespoons of sugar
1 tablespoon of butter
fruit
3 big apples
2 tablespoons of maple syrup
1 tablespoon of lemon juice
crumble topping
40g of desiccated coconut
20g of butter
1 tablespoon of sugar

Today I would like to share with you the recipe for a thick and rich one-pot meal: Mexican soup with a large amount of beans and meat. It has a strong tomato flavour, pepper, a beautiful smell and is easy to reheat. There are as many recipes for Mexican soup as there are housewives. You may prepare this soup with or without meat, chorizo or bacon. You always you have to use beans (one or more kinds of them), spicy peppers (jalapeno is excellent), smoked paprika, onion and tomato. I add cubed turkey thigh and very fragrant smoked bacon to my soup. The dish was excellent and very spicy, to the delight of my daughter.


Ingredients (for 4 people)
600g of cubed turkey thigh
250g of smoked bacon
1 tin of red beans
1 tin of white beans
250ml of tomato passata
1 big onion
3 cloves of garlic
chilli pepper
2 teaspoons of sweet smoked paprika
2 twig of rosemary
2 twig of thyme
a pinch of ground cumin
a pinch of ground coriander
1l of beef stew
3 tablespoons of chopped parsley
salt and pepper

I value French pastry for the opportunities which it gives me. I like it and I use it very often. It is excellent for tarts, shepherd's pie, dumplings and desserts. Today I made some swift cookies with French pastry with cottage cheese and fruit. They look beautiful with the seasonal fruit. If you make them in the winter, use citrus fruit, kiwi fruit or grapes. The cookies will be great.


Ingredients (6 cookies)


1 pack of French pastry
200g of cottage cheese
2 egg yolks
6 tablespoons of brown sugar
2 tablespoons of potato flour
2 tablespoons of milk
fruit for decoaration
