Three herring recipes

In Poland we used to say that of all sweets we like herrings the most. This means that we don't like sweets at all, so we choose herrings when people ask us if we want dessert. In my family we can't say this, because we like them both.
We like herrings regardless of how they are prepared or served, although maybe fried herrings are not so good. Today, I would like to share with you three very easy recipes for herring dishes. The last recipe comes from www.karmelkat.blog.pl and this dish will stay in our bill of fare for good.
 

Traditional herrings
Ingredients:
250 g of herrings in oil
2 big onions
olive oil
Dice the onion. Slice the herrings into 2cm pieces. Put them into a bowl and cover with the onion. Sprinkle with olive oil. Seal the dish with plastic wrap and put into the fridge for 2 hours.


Herrings in yoghurt sauce
Ingredients:
250 g of herrings in oil
1 small onion (not too ripe)
4 dill pickles
1 small apple
180 g of natural yoghurt
3 teaspoons of mayonnaise
Dice the onion, the dill pickles and the apple. Slice the herrings into 2cm pieces. Mix in the yoghurt and the mayonnaise. Add the vegetables to the sauce. Put the herrings into a bowl and cover with the sauce. Seal with plastic wrap and chill in the fridge.

Herrings with prunes
Ingredients:
250 g of herrings in oil
2 onions
10 prunes
2 teaspoons of tomato concentrate
pepper, marjoram
Cut the onions into slices. Heat some oil in a big saucepan and fry the onions (but not until they are brown). Add sliced prunes and fry for 10 minutes. Add the tomato concentrate and if the sauce is too thick, you should pour in 2-3 tablespoons of water. Fry for a while. Now add the herrings to the saucepan and mix it up. Put the dish into a bowl. When it cools down, seal with plastic wrap and put it into the fridge for 3 hours.
