Home-made chocolate budino with amaretto and caramelized peaches

When we go on holiday we usually don't have an oven, so we can't make cakes and muffins for dessert or afternoon tea. Of course we can visit one of the seaside cafes where (often with a sea view) we may eat apple pie with ice cream or cheese cake with raspberry syrup. When the weather isn't encouraging or we don't want to go away, I reach for proven home desserts. Homemade kissel with fresh fruit or budino with chocolate glaze are always welcome.


Today I would like to share with you the recipe for chocolate budino for adults. If you want to prepare it for children, lose the amaretto and chili pepper. The dessert will be gentle but also tasty.


Ingredients (for 4 people)
budino
500ml of milk (you may use vege milk)
200g of dark chocolate
1 tablespoon of wheat flour
1.5 tablespoons of potato flour
2 tablespoons of amaretto
confiture
3-4 peaches
a piece of chili pepper
3 tablespoons of maple syrup
1 tablespoon of amaretto

 

Add the dark chocolate to 400ml of the milk, pour in the amaretto and boil it. Mix both kinds of flour with 100ml of the milk. Add the flour mixture to the boiling milk, stirring constantly. Boil it for a while. Put the budino into some bowls.
Wash the peaches, peel and cube them. Mix the amaretto, chopped chili pepper and maple syrup in a pot. Add the peaches. Boil until the fruit is soft and the juice gets thicker. Decorate the budino with the confiture.
