Colourful groats

Inspired by healthy food and using groats in 1001 possible and impossible ways, I prepared my own groats dish. It is excellent for lunch and safe to take to work. You can lock it up in your lunch box and eat it when you would like something tasty. This meal is easy to heat up and it doesn't have such a strong smell. This is important when we share a common space in the office. Prepare your own version of this dish: there are as many opportunities as there are kinds of groats and vegetables. If the only thing you like without meat is desserts, add fried chicken breast, bacon or sausage.


Today I would like to propose a colourful dish. I prepared three versions: red groats with beetroots, yellow groats to which I added pumpkin, and green groats with courgette and peas. If you would like more colorful dishes, mix the vegetables together. It is immensely important not to overdo the vegetables. If they are not crunchy, the dish will lose its character and it won't look nice. And we also eat with our eyes, don't we?


Red groats
Ingredients:
150g buckwheat groats
2 baked beetroots
red pepper
half a red onion
half a chili pepper
1 clove of garlic
2 tablespoons of lemon juice
1 tablespoon of honey
salt and pepper
sesame seeds
Boil the buckwheat groats in salty water for 15 minutes. Strain them. Dice the beetroots, pepper, onion, garlic and chili pepper. Fry lightly in oil. Mix the vegetables in with the groats, spice them up with salt, pepper, lemon juice and honey. Sprinkle with the sesame seeds.


Yellow groats


Ingredients:
150g of bulgur
0.5kg of butternut squash
yellow pepper
half a tin of sweet corn
2cm of ginger root
2 cloves of garlic
1 teaspoon of curry powder
half a teaspoon of herby pepper
2 tablespoons of lemon juice
1 tablespoon of honey
sunflower seeds
salt
Boil the bulgur in salty water for 15 minutes. Strain it. Dice the butternut squash, pepper, ginger and garlic. Fry lightly in oil. Mix the vegetables in with the groats, add the sweet corn, and spice it up with salt, herby pepper, curry powder, lemon juice and honey. Sprinkle with the roast sunflower seeds.

 

Green groats
Ingredients:
150g of millet groats
courgette
a piece of leek
2 cloves of garlic
2 sticks of celery
Half a tin of green peas
pumpkin seeds
1 teaspoon of dried basil
2 tablespoons of raw sesame oil
salt and pepper
Boil the millet groats according to this recipe (link). Slice the leek and celery, cut the courgette and garlic and fry lightly in oil. Add the peas, millet groats, and spice it up with the basil, sesame oil, salt and pepper. Sprinkle with roast pumpkin seeds.
