Roast courgette rolls with meatballs and tomato sauce

domowy patchwork

I think that all children like meatballs. It is an easy dish, always yummy, and I make it often. So I feel a bit bored with this dish now. Today I would like to share with you a new version of the kids' favourite meal. I made some meatballs, but the dish didn't look the same. By the way, I served vegetables which taste entirely different in the form of rolls. I recommend serving the courgette rolls with rice or groats and, if your children like it, with fresh salad. My children enjoyed this dinner without fussing. I recommend it!

500g of mincemeat
1 onion
1 shallot
3 cloves of garlic
1 egg
3-4 tablespoons of breadcrumbs
2 big courgettes
500ml of tomato passata
a few slices of smoked bacon
150g of grated mozzarella
2-3 tablespoons of oil
1 teaspoon of dried oregano
1 teaspoon of sweet paprika
1 twig of rosemary
salt and pepper

Make the meatballs first. Add the chopped onion, one crushed clove of garlic, breadcrumbs and egg to the meat. Spice them up with salt and pepper and mix them in. Make small balls. Heat 1-2 teaspoons of oil in a pan and fry the meatballs.
Now make the sauce. Slice the shallot and the rest of the garlic. Heat the rest of the oil in the pan and fry the vegetables. Add the passata, rosemary, oregano and paprika. Spice them up with salt and pepper and boil for 5-7 minutes. Wash the courgettes and slice them lengthwise into thin slices. Add pepper. Put the slices of smoked bacon and a meatball onto every slice of courgette. Roll them up tightly and secure with a toothpick.

Heat the oven up to 180C.
Put the tomato sauce into a casserole dish and arrange the courgette rolls in it. Roast for 20-25 minutes. Add the grated mozzarella and roast for 5 minutes. Serve at once with rice or groats.

Enjoy your meal!
