Rosemary focaccia – the beginning of a nice evening

Focaccia is a kind of bread which may be a solo dish or, for example, a pizza base. Depending on the part of Italy you visit, you can get different focaccia: with rosemary, tomatoes (fresh or dried), olives or salt. I like fresh hot focaccia with rosemary, cherry tomatoes and black olives. I like to dip it in olive oil. I need a glass of my favourite wine and the beginning of a nice evening is ready.


Ingredients:
250 g of flour
125ml of warm water
4 tablespoons of olive oil
1 teaspoon of sugar
2 teaspoons of salt
5 g of instant yeast
a few sliced black olives
a few cherry tomatoes
2 twigs of rosemary


Mix the yeast, sugar and salt in a bowl. Add warm water and 2 tablespoons of the olive oil. Knead a smooth dough. Put it into a clean bowl, cover with a clean kitchen towel and leave for 2 hours in a warm place.
Cover a baking sheet with some baking paper.
Add the chopped rosemary to the dough, knead a little, and smooth with some olive oil by hand. Put the dough onto the baking sheet. Smooth it with some olive oil. Arrange the cherry tomatoes and slices of black olives on top. Cover with the kitchen towel and leave for 30 minutes.
Heat the oven up to 190C. Bake the focaccia for 20-25 minutes.
