In Poland I don't have a trusted place where I can buy fresh fish and seafood. Sometimes I buy some, but it is always a crapshoot. In Spain, close to our house there was a market with a big fish sector. I was delighted. This market doesn't resemble the bazars which we know from a few years ago in Poland. It was an interesting structure and clean and nice with a family atmosphere inside. During our second visit the salesmen recognised us and said "hola!" You could get vertigo from the wealth of products, and we didn't know what we should buy first. The best thing was the fact that whatever you chose it was fresh and yummy and tomorrow you could come back and buy something new. It was sweet that the salesman always cleaned the fish which we chose. We needed only to fry or bake them. For the first dinner we prepared seafood in the Spanish style. For the next one we chose sole – one of my favourite fish. The salesman advised us not to overcomplicate things with the ingredients, and to fry them only with some butter, parsley and lemon.


I took the advice and served the fish fried with fresh salad, artichokes and a baguette. You can make it in the same way or prepare your own dish. The devil is in only one detail – you need to have really fresh fish.


Ingredients:
2 fillets of sole
2 tablespoons of clarified butter
half a lemon
2 tablespoons of chopped parsley

Valentine's Day - some people like it, but others hate it. However you feel, every day is a good day to eat something yummy in nice company. So why not do this on Valentines day?


Today I would like to share with you a recipe for an easy but excellent dessert for two. The light, sweet mousse with white chocolate made with aquafaba goes well with currant confiture. You can use something different, but I recommend something that is not too sweet.


Ingredients (for 2 people)
100ml of aquafaba
100g of white chocolate
200g of red currants
1 teaspoon of caster sugar

Among all types of seafood, in my opinion octopus tentacles look the most intriguing on a plate. I buy octopus tentacles in a small fish shop where they are constantly on sale. They are boiled and chilled and actually ready to eat. We like them grilled with fresh French bread prepared "at once" just after shopping. This time I served them in a more decorative way. I served grilled parsley-garlic octopus tentacles with fresh lettuce and French toast. The salad was excellent and looked beautiful. I recommend it for a special occasion. Maybe it is a great idea for a light dinner on Valentine's Day.


Ingredients (for 2 people)
4 small octopus tentacles
4 fistfuls of mixed lettuce
a few cherry tomatoes
a few black olives
2 tablespoons of small capers or a few big capers
a lemon
marinade
4 tablespoons of olive oil
2 tablespoons of chopped parsley
1 teaspoon of chopped chili pepper
2 cloves of garlic (crushed)
salt and pepper

I like busy days. Even if I'm very tired, I feel that I use this time to the max. I'm glad especially when everything goes as planned and I manage to do everything. On such days it is worth having a few recipes for swift dishes to make a nice homemade lunch.


Pastas with homemade pesto or sauces are excellent for such situations. Most often I make my favourite green basil pesto or red pesto with dried tomatoes. I sometimes use tomato sauce. Today I chose creamy curry sauce with Parma ham. I also added black olives and chopped parsley. It was so yummy!


Ingredients (for 2 people)
150g of pasta
150g of Parma ham
1 clove of garlic
1 shallot
chili pepper
1 tablespoon of butter
150 ml of 30% sweet cream
1 teaspoon of curry powder
10 black olives
2 tablespoons of chopped parsley
salt and pepper

I have a few recipes for soups which rescue me when I have to prepare something warm for lunch or dinner. These are: tomato soup, green bean soup, cream of courgette and, recently, cheese soup. I have made cheese soup before, but a simple version. This time I used a recipe by Jakub Kuroń. This Neapolitan version of cheese soup was with bacon, carrot and red pepper. My older version wasn't so good. I prepared crunchy croutons for my cheese soup, but you can use crunchy bread. My children were delighted and had a second helping. I recommend it!


Ingredients:
300 g of cream cheese
1l of vegetable bouillon
100 g of cubed bacon
1 small leek
1 carrot
a piece of celery root
1 parsley root
1 sweet red pepper
2 chopped cloves of garlic
1 tablespoon of oil
1 teaspoon of butter
2 bay leaves
3 allspices
salt and pepper
croutons or crunchy fresh bread
2-3 tablespoons of chopped parsley
