Everyone associates the winter and December with Christmas, family atmosphere, and the spicy fragrance of cakes and cookies. Today I decided to welcome to my home the warm flavour of cinnamon rolls, which are excellent with a cup of hot cocoa. They are also a nice part of the school packed lunch. I put small cinnamon rolls into my daughter's lunch box. It was a shame that I couldn't see her face when she opened her box. I don't think this is the last time I'll prepare cinnamon rolls this year.

Ingredients:
dough
250g of flour
7g of dry yeast
1 egg
75g of sugar
125ml of milk
40 g of butter
a pinch of salt
filling
70g of butter
20g of cinnamon
2 tablespoons of vanilla sugar
70g of brown sugar
3 tablespoons of lemon zest
lemon icing

Mix together the flour and dry yeast. Add the rest of the ingredients (except the butter) and knead the dough until it doesn't stick to your hand. Then add the melted butter and knead it again. The dough should be soft and flexible. Put the dough into a bowl sprinkled with flour and cover with a clean cloth and leave in a warm place for an hour and a half.
Heat the oven up to 180C. Cover a baking pan with some baking paper.
Knead the dough again. Roll out the dough and spread with melted butter (leave 2 tablespoons of the butter for later). Sprinkle with the mixture of the sugar, vanilla sugar, cinnamon and lemon zest and roll the dough along the longer edge. Cut them into 2-cm slices. Put them onto the baking pan and spread with the rest of the melted butter. Leave in a warm place for 20 minutes. Bake for 20 minutes. Decorate with the lemon icing before serving.

Enjoy your meal!
