Usually I cook for the whole family. Sometimes I prepare something that my children really like, because we adults adjust more easily and "like" everything. This time I did something different and prepared a dessert for adults. I served a light mousse with nuts with perfect winter gingerbread liqueur and dark chocolate. It is very easy to make a child-friendly version of this dessert. Just replace the gingerbread liqueur with fruit or chocolate icing. You should prepare the liqueur a few days earlier. It is excellent on a languorous winter evening, or it goes well with dessert and ice cream for adults.
150ml of aquafaba
a pinch of salt
2-3 tablespoons of peanut butter
1 teaspoon of caster sugar
400ml of sweet condensed milk
50g of dark chocolate
1 tablespoon of gingerbread spices
175ml of whisky
200ml of vodka
25g of dark chocolate
a couple of salty peanuts
Prepare the gingerbread liqueur first. Heat the condensed milk. Add the dark chocolate. Mix it in until the chocolate is melted. Don't boil it! Add the gingerbread spices, mix them in and heat for 5-6 minutes until the spices give off an aroma. Turn off the heat. Add the whisky, vodka and mix them in. Pour into a flagon. Keep in the fridge.
Whip the aquafaba in a very clean glass bowl. Add the salt, caster sugar and peanut butter and stir thoroughly but gently. Put the peanut whip into some small bowls and leave in the fridge for 1-2 hours. Add the gingerbread liqueur, sprinkle with the grated dark chocolate before serving. Decorate with some salty peanuts.
