In the summer, everything for me is with strawberries. Salads, desserts and for dinner of course spaghetti or rice with strawberry mousse. We have to make good use of good things. The strawberry season will be ending soon. Today I offer a strawberry version of a dessert with chia seeds. This time I didn't add coconut milk and yoghurt to the chia seeds. Chia filled out only with strawberry mousse. Greek yoghurt without sugar was the finishing touch. It made a perfect meal: light, healthy and very delicious. Prepare it in the morning, because chia needs some time to fill out. It will be perfect for afternoon tea or dessert after lunch.
1 kg of strawberries
2-3 tablespoons of bright honey
1 tablespoon of lemon juice
3-4 tablespoons of chia seeds
150g of Greek yoghurt
Clean the strawberries. Leave aside some nice fruit for decoration. Blend the rest of the strawberries. Add the lemon juice and honey and mix them in. Add the chia seeds and mix again. Leave in the fridge for a few hours. Put the strawberry-chia mixture into some small bowls. Put some Greek yoghurt on the top. Decorate with the strawberries.
