Pancakes with banana and chocolate – my son’s sweet afternoon tea

I am sure I have written about how my son likes pancakes and pikelets more than once. Doesn't matter if I make them from vegetables or fruit, he will eat as much as he can anyway and ask for seconds. He eats them with icing sugar (even those made from vegetables). He only makes an exception for American pancakes, which he eats with maple syrup. Today I went a little crazy and I prepared a luxurious version of pancakes with bananas and runny chocolate inside. I recommend them to everyone; it is really difficult to resist them.


Ingredients:
500ml of natural yoghurt
8 tablespoons of flour
3 tablespoons of potato flour
1 teaspoon of vanilla essence
1 teaspoon of baking powder
2 teaspoons of caster sugar
2 bananas
8 pieces of chocolate
oil for frying


Peel the bananas and slice them.
Mix the yoghurt with the two kinds of flour, the caster sugar, baking powder and vanilla essence. With a spoon, put the dough into the oil, then add a few slices of banana and a piece of chocolate. Cover with another spoon of dough. Fry the pancakes until they are golden. Serve sprinkled with caster sugar.
