During the holiday, eating is a waste of time for my children. Although breakfast should be a balanced and calm meal, at this time it is eaten quickly and carelessly. Sometimes I need to wrest my children away from their play and nourish their young bodies with brunch.

Today I would like to share with you the recipe for a very simple egg and vegetable brunch. Though my children like all vegetables, the look of the food made them anxious. Only the soft boiled eggs settled them down and got them eating. After a while there were two empty glasses in the dishwasher and my children could go back to playing. It was good, because the holiday is almost over.

Ingredients (for 3 people)
half an onion
2 cloves of garlic
1 tablespoon of butter
300g of courgette
1 red pepper
2 tomatoes
2 sprigs of rosemary
2 sprigs of thyme
3 tablespoons of minced chives
3 eggs

This August while traveling through Italy the thermometer in our car showed 43C. Though it was still far from Death Valley records, the temperature was extreme and didn't encourage us to get out of the air-conditioned car. Only late evening at the hotel swimming pool held out the promise of respite.

A nice adjunct to these warm moments was the light colourful and cooling drink called Aperol Spritz. Is has the beautiful colour of sunset. Aperol is a light alcoholic drink made with orange, rhubarb and herbs. In the original recipe you will find Prosecco and sparkling water. If you like sweet drinks, you may use Sprite or tonic instead of water. Pleasantly rattling ice cubes and orange slices are obligatory ingredients of the drink.

Ingredients:
3 fingers of Prosecco
2 fingers of Aperolu
1 finger of sparkling water
ice cubes and orange slices

Every child likes pancakes. However, if we make them whenever our children want, they will look like pancakes. Fortunately, my children don't have a weight problem, but I know that I have to look out for their diet. Today I would like to share with you the recipe for "slimmed down" pancakes. Luckily, I don't have any problems with fruit in my children's diet; they like all kinds of fruit. But I know that for other parents pancakes could be the best way to sneak some vitamins into their food.

I found the recipe for the pancakes at www.wegepedia.pl, and it appealed to me instantly because of the easy and basic preparation and the yummy look of the pancakes.

Ingredients:
200g of granary flour
one teaspoon and a half of baking powder
4 tablespoons of brown sugar
1 flat teaspoon of cinnamon
300ml of vegetable milk
Other ingredients
100g of bilberries
30ml of water
3 dates

When going on holiday I don't like packing and unpacking. Even after the finest travel a huge pile of baggage kills my good mood. The clothes which I have to wash at once, the toys for the beach, which are always covered in sand the whole year, the shoes which I have to dry because the waves of the sea were recently ruthless, a lot of trinkets, and, most importantly of all, souvenirs from the holiday, which we absolutely must bring back home. The parents of young gatherers of everything know what I am talking about: seventeen very beautiful cones, one hundred different stones, a board which apparently was once a raider ship and fifteen sticks, each of which has a different magic power. The most awful thing is that I will have to pack most of these things again...

We try to enrich the journey home with sightseeing tours, which means we usually get back home late in the evening. At home the empty fridge waits for us and the children just behind the doorstep ask "Mum, what we will eat for supper?" Children have such perfect timing Mrugnięcie

Today I would like to share with you the recipe for a dish which saves the nerves of the housewife. You have to do a little shopping, but you can find the ingredients in every local shop. It is a slightly more sophisticated approach to the toast which we made in my family home. Ten minutes of preparation, twenty minutes in the oven (when you are able to put the laundry on) and the supper is ready.

Ingredients:
1 pack of chilled French pastry
6 slices of ham
6 slices of cheese
6 eggs
2 tablespoons of nigella

The holiday is a time when everybody should rest. Although it is difficult for children to comprehend, the holiday is also for parents, and it doesn't only consist of providing entertainment for children. For housewives it should be a break from bothersome cooking. Fortunately, fresh fruit and vegetables make cooking simpler and lighter. Sometimes in holiday resorts we can eat out, but it is not always easy to find something good and tolerably cheap. For me, supper is always the most difficult meal. At first I could always rely on sandwiches, but at some stage there comes the moment when I hear: "again?" Mrugnięcie

Today I would like to share with you the recipe for a dish which meets holiday requirements. It is easy, and it doesn't need sophisticated ingredients or an oven. A frying pan is enough. Quesadilla, the dish in question, is a tortilla with melted cheese. The rest of the ingredients you choose at your discretion. Red beans, pepper, chorizo or fried meat all work brilliantly. I added fried pieces of turkey leg. Thanks to this, my dish could be a holiday dinner.

Ingredients (for 2 people)
4 tortillas
300g of turkey leg
half a chili pepper
half an onion
1 clove of garlic
2 tablespoons of oil
200g of tinned sweetcorn
200g of tinned red beans
fresh pepper
200g of mozzarella cheese
salt and pepper
