Today something Mediterranean. Bruschetta – an excellent Italian snack, which is perfect as a weekend breakfast or light dinner. Basically, it is toast sprinkled with olive oil and spread with crushed garlic and served with tomatoes and basil. In the past it was a simple meal for olive planters – hard-working people, doing a few hours of repetitive work, toasting pieces of bread over the fire, sprinkling them with olive oil and salt.


I have eaten this dish with dried tomatoes, but in my opinion it tastes better with fresh sun-smelling tomatoes. Try both versions and choose your favourite. You can beef the bruschetta up with avocado, mozzarella cheese or olives and prepare according to your own recipe.


Ingredients:
1 ciabatta
1 big tomato
100g of mozzarella cheese
half an avocado
1 clove of garlic
2 tablespoons of olive oil
salt and pepper

Have you ever eaten avocado from the oven? Until today for me it has always been a salad ingredient or something to spread on bread. It never occurred to me to bake it. If you like avocado and have never prepared it this way – take a chance. Avocado stuffed with quail egg and decorated with smoked salmon not only looks beautiful but is also excellent. Serve it on lettuce with small tomatoes and sprinkled with lemon juice. Sometimes it is worth taking a chance.


For this dish you should choose a nice avocado without dents or dark marks. In the oven every blemish in the skin goes black and the dish doesn't look appetising. If you don't like smoked salmon, replace it with dried tomatoes or a large egg.

New Year's Eve is approaching fast. Today I have a recipe for people who are going to spend this night at crazy parties and balls. Small snacks will appear on the party tables. These should not threaten to spoil our evening dresses and should be easy to grab between dances. We will not have to guard our plate, and during standing parties it is difficult to use knives and forks. The best option will be canapés, rolls and the other bite-sized snacks.


I would like to share with you a recipe for biscuits with two kinds of filling. The first one is a salad with smoked salmon and shrimps with a bit of mayonnaise, and the second is an avocado paste with feta cheese. Put into small biscuits, they look beautiful and taste excellent. You can prepare the biscuits yourself. However, if the preparations for the New Year's Eve party run on longer than planned, you can use ready-made biscuits from the shop.

Today I would like to share with you a recipe for a dish which has been served at the Sunday breakfast table for a few weeks now. Until recently, our favourite weekend meal was "egg on a box". A few weeks ago my husband prepared "hambukses". My children wouldn't be themselves if they didn't moan and groan before seeing and trying something new for breakfast. A novelty on a plate is suspicious, and it is necessary to take precautions by embellishing it with an appropriate serving of grimaces. Today "hambukses" have a permanent place on our home menu.


Fresh crusty kaiser rolls are essential when preparing "hambukses". You may also brown them in a toaster. Equally important is fresh fragrant ham. You can fry the eggs the way you like them. In our home everyone has their preference: with runny yolk which daintly drips from the kaiser roll, more congealed or well done.


Ingredients:
4 kaiser Rolls
4 slices of cheese
4 slices of ham
4 eggs
2 dill pickles
2 tablespoons of butter
a fistful of radish shoots

Breakfast is a very important meal. Everybody knows this. A hungry man doesn't think about his job and learning, but only about his rumbling stomach. Breakfast which is healthy and tasty, but above all fast and easy to prepare, is worth its weight in gold. This dish is appreciated by every mum who is in a hurry to get both herself and her children ready. Morning fussiness really doesn't help this along.


I would like to share with you a breakfast which you can partly prepare in the evening and finish off in the morning and then serve as a dish fit for a king. You should soak some chia seeds in milk and leave them overnight. You can use cow's milk or coconut milk (I use a mixture of both) or if your children don't drink cow's milk, use soya milk (maybe vanilla soya milk – the best for children). Serve with your favourite fruits, desiccated coconut or roast almond slices.

100ml of milk
200ml of coconut milk
3 tablespoons of honey
½ teaspoon of vanilla essence

3 tablespoons of desiccated coconut
