My daughter’s favourite dish – pad thai with shrimps

Pad thai is definietly my daughter's favourite dish. She often chooses pad thai with shrimps, but with tofu or chicken is also acceptable. The coronavirus Quarantine means that going to restaurants is impossible. You can of course order take away, but it is not the same. My daughter and I decided to put our heads together and prepare pad thai in our kitchen. The task wasn't that complicated. Furthermore, it was a really amazing experience, because it was the first time my daughter was in charge in the kitchen. It was nice and later it was really delicious – try to prepare Pad Thai on your own. Prepare every ingredient separately, so later you can concentrate on the things you should do and make everything perfectly. Later it's just mixing ingredients together and heating them up in a big pan or a wok.


Ingredients (for 4 people)
300g of rice or wheat noodles
4 tablespoons of chopped roasted peanuts
4 tablespoons of chopped chives
5 tablespoons of mung bean shoots
1 tablespoon of butter
sauce
5 tablespoons of fish sauce
3 teaspoons of lemon juice
1 teaspoon of tamarind paste
3 tablespoons of sugar
2 tablespoons of chopped chili pepper
Mix all the ingredients of the sauce. You can heat it a bit to dissolve the sugar more easily.


shrimps
400g of shrimps (shelled)
1 tablespoon of butter
2 cloves of garlic
half a chili pepper
3 tablespoons of chopped parsley
Melt the butter in a pan. Add the chopped garlic and chili pepper and fry for a while. Add the shrimps and fry until they are pink. Turn off the heat and add the chopped parsley. Mix it in.


omelette
4 eggs
1 teaspoon of butter
2 teaspoons of chopped dill
2 tablespoons of milk
salt and pepper
Whisk the eggs with milk. Add the chopped dill and salt and pepper and mix them in. Melt the butter in a pan and pour in the egg mixture. Fry until the eggs are set. The omelette should be thin. If you have a small pan, you should fry two omelettes. Leave the omelette to cool down and cut it into thin strips.


Cook the noodles by following the recipe on the box. Melt the butter in a big pan. Add the noodles, shrimps, omelette and sauce. Mix them in and fry for a while. Turn off the heat. Add the mung bean shoots and mix them in. Arrange the pad thai in some bowls. Sprinkle with the chopped chives and peanuts.
