Today I would like to share with you the recipe for a dish which I made with my favourite ingredients. In my opinion pistachios are one of the tastiest nuts. I like them salty but I recently discovered unsalted ones. They have a remarkable flavour, which in salty pistachios is almost indiscernible. Spaghetti has always been my favourite dish. I can always choose a kind of sauce that will make the dish excellent. Today I offer you spaghetti with pistachio pesto – a swift, easy and yummy meal. It is one of those dishes where one serving is not enough. I recommend it!


Ingredients (for 2 people)
300g of spaghetti
100g of unsalted, peeled pistachios
100ml of olive oil
3 tablespoons of grated parmesan
basil leaves
1 clove of garlic
1 teaspoon of lemon juice
salt

Not so long ago my children didn't eat dishes with sauce. In stew sauce was only acceptable with meat and couldn't touch the kasha, pasta or potatoes. Now the situation has changed and meals with sauce can be mixed with other ingredients. Riding the wave, I prepared today some pieces of chicken in a cream dressing with peas, courgette and, get this: sun-dried tomatoes! I even managed to smuggle that in. I am interested if it is a breakthrough or they just didn't notice. Mrugnięcie


Ingredients:
500g of chicken meat
half a courgette
150g of green peas (from the tin or frozen)
2-3 dried tomatoes
2 teaspoons of thyme
1 teaspoon of curry powder
half a teaspoon of sweet paprika
150ml of bouillon
150ml of 30% sweet cream
1 tablespoon of olive oil
salt and pepper

It is asparagus season, so we eat it very often. Soups, salads, lunch and snacks – I think the only thing I haven't served asparagus with is cherry jam Mrugnięcie, because I have already done asparagus with fruit. Today I have a very quick and easy, but very delicious, lunch with asparagus in the main role. I added gorgonzola cheese sauce to pasta and unsalted pistachios. The dish looks delicious. What a shame the asparagus season is so short.


Ingredients (for 2 people)
150g of penne
1 bunch of asparagus spears
150g of 30% sweet cream
100g of gorgonzola
1 clove of garlic
half a teaspoon of butter
a fistful of pistachios

Something sweet was walking behind me and I almost tripped on it. As the old Polish saying goes: "Sometimes you have to, or else you will suffocate". Although I could have eaten a piece of chocolate, (amazingly) that wasn't what I wanted. That's why today I offer you a delicious coffee-chocolate dessert with light peanut cream. The dessert has the texture of pudding and a very chocolatey surprise inside, so it's better to eat it hot or a bit warm. Otherwise, the melt-in-the-mouth surprise won't have the same texture Mrugnięcie To the dessert I added two strong as tar espressos, but you can make it only with chocolate if you plan to give it to small children.


Ingredients:
500g of coconut milk
2 espressos
50g of dark chocolate
4 pieces of dark chocolate
2 tablespoons of maple syrup
3 tablespoons of flour
half a pomegranate
peanut cream
3 big tablespoons of peanut butter
1 tablespoon of maple syrup
3 tablespoons of warm water
a pinch of salt

I don't have any inspiration lately. It takes a lot of time to create something new and surprising. We all have bad days, so I will sit in the corner quietly and wait till it is gone. It has to go some time. And for now I offer something from my home classics. Cake with pudding and fruit. This time I chose apples, pineapple and cranberries. The cake was subtle and crunchy, and the filling was juicy and perfectly contrasted with the sweetness of the cake. So it doesn't matter if you have an afflatus to make something new or you have a crisis, you can always reach for the classics. It paid off for me.
